How to use this collection

Why ground turkey is a budget buy

In our own ingredient costing a pound of ground turkey is $3.99 against $5.99 for 80/20 ground beef - about $2.00 a pound less, on the ingredient that usually decides what a dinner costs. That single difference is why all 15 of these plates land under $2 and the median is $1.44.

Keeping it moist - the whole problem in one card

Turkey holds far less fat than 80/20 beef, and fat is what forgives overcooking. So three things do the work: a binder (breadcrumbs plus an egg, and milk or Parmesan if the recipe has it), a fat you add yourself (a tablespoon of oil in the pan, not a dry non-stick surface), and pulling it off the heat the moment it is done. Dry turkey is almost always overcooked turkey, not bad turkey.

Cook it to 165°F

Poultry - including ground turkey - should reach an internal temperature of 165°F (74°C). That is the standard food-safety guidance and it is not optional the way a beef doneness preference is: ground poultry has no safe pink stage. An instant-read thermometer is the only way to know, and it is also the cheapest way to stop overcooking, which is what makes turkey dry in the first place.

When turkey can stand in for beef

Anywhere the meat is carried by a sauce, a broth or a starch: chili, soup, taco filling, a tomato pasta, a rice skillet, a casserole. In those dishes the liquid does the moisture work, the seasoning does the flavour work, and a straight one-for-one swap by weight behaves almost identically. Six of the ten recipes here are exactly that kind of dish.

When it should not be a straight swap

Where the beef fat IS the recipe: a burger you want to cook medium, a smash burger, anything relying on rendered fat for richness or on pink centres. Turkey has to go to 165°F, so a turkey burger needs a binder and a gentler cook, and it eats leaner and firmer than a beef patty however carefully you handle it. That is a different dinner, not a worse one - but do not expect a beef burger.

Storage, reheating and freezing

Why does my ground turkey come out dry?

Almost always because it is overcooked, not because it is turkey. It has much less fat than 80/20 beef, so there is nothing to mask an extra two minutes in the pan. Use a binder in anything shaped, add a tablespoon of oil to the pan, and take it off the heat as soon as it reaches 165°F rather than cooking it until it looks dry.

Can I use ground turkey instead of ground beef in these recipes?
